Apple Baker in Moss Green

There was an apple tree growing behind the studio in Angola.

Every fall, Jen and I would wander out and pick an apple or two at the end of the day. We started experimenting in her little kitchen, trying to satisfy the craving for baked apple pie without committing to peeling, rolling pie crust, or turning the whole evening into a baking project. Somewhere along the way these little apple bakers became part of the routine. We probably ate more baked apples than any reasonable person should.

This Apple Baker is the same familiar size and shape as our Companion Bowl, but with a small cone in the center. Core an apple, set it over the cone, add a tablespoon of brown sugar or maple sugar, a pat of butter, and microwave for four or five minutes. The apple softens, the butter melts into the sugar, and suddenly the kitchen smells like someone has been baking all afternoon.

It reminds me of apple orchards in October, backyard trees that dropped fruit faster than anyone could keep up with, and those evenings when you wanted something warm and comforting but didn't have the energy to make an entire pie.
